INGREDIENTS

  • 2 lb Ground meat of choice
  • 1 tbsp Cooking oil
  • 1 Medium onion diced
  • 5 Garlic cloves minced
  • 1 Jalapeño seeded and finely diced
  • 2 tbsp Tomato paste
  • 1 ¼ cups Broth of choice
  • 2 (15 oz) Cans of petite diced tomatoes (liquid included)
  • 2 (15 oz) Cans of red kidney beans drained and rinsed
  • 1 (15 oz) Can of sweet corn drained and rinsed, optional
  • 1 (15 oz) Can of pinto beans drained and rinsed
  • 2 tbsp Justin’s Classic Peanut Butter
  • 2 ½ tbsp Smoked paprika
  • 2 tbsp Chili powder
  • 1 tbsp Ground cumin
  • 1 ½ tsp Salt
  • 1 tsp Ground black pepper or to taste
  • ½ tsp Ground cayenne pepper

DIRECTIONS

  1. Place a large pot on the stove on medium heat. Add some olive oil and start by sauteeing the
    usuals: onion, garlic and a bit of jalapeno.
  2. Add tomato paste to the base and mix in your favorite ground meat.
  3. Once the meat is cooked, add in smoked paprika, cumin and chili powder. Mix well.
  4. Add canned tomatoes, beans and broth. Let everything simmer to enhance the flavors.
  5. Add Justin’s Classic Peanut Butter and mix well.
  6. When ready to serve, add preferred toppings and drizzle on a bit more peanut butter.
  7. Enjoy!

You can make lots of things in a skillet, one of my personal favorites is making my Peanut Butter Cup Oatmeal Skillet Cookie recipe. I’m a sucker for a great doughnut, but sometimes I want to eat a whole dozen of them. My doctor tells me that eating that much fried dough isn’t good for me, but I’ve found a loophole. My Baked Cinnamon Almond Butter “Churro” Doughnuts are baked not fried. You still probably shouldn’t eat a dozen of them by yourself though.
