Gluten Free Peanut Butter Cookie Pie

Ice cream cake thought it was number one when it came to desserts. Well. they may be great, but they don’t beat my Gluten-Free Peanut Butter Cookie Pie! It’s made with JUSTIN’S® Classic Peanut Butter so you know it’s great. You might not be able to beat it, but you sure can eat it.

INGREDIENTS

1 cup JUSTIN’S® Classic Peanut Butter
JUSTIN’S® Peanut Butter Cups, chopped
1 cup Sugar
1 Egg
2 cups Ice Cream, any flavor

DIRECTIONS

1. Preheat the oven to 350°F.

2. In a large bowl, mix 1 cup of JUSTIN’S® Classic Peanut Butter, sugar, and egg until dough forms.

3. Spray a 9-inch pie pan with nonstick cooking spray, and press the cookie dough mixture into a pie pan with a spatula to make crust.

4. Bake the cookie crust until the edges are golden, for about 15 minutes.

5. Cool completely.

6. Spread the softened ice cream into crust. Freeze for at least 3 hours.

7. Top with chopped JUSTIN’S® Peanut Butter Cups and a drizzle of JUSTIN’S® Classic Peanut Butter.
