INGREDIENTS

  • 1 large ripe banana
  • 2 eggs, beaten
  • 2 teaspoons Justin’s Maple Almond Butter
  • 2 teaspoons ground flaxseed
  • 2 teaspoons butter
  • Optional toppings: banana slices, nuts, Maple Almond Butter, maple syrup

DIRECTIONS

  1. In a mixing bowl, mash the banana with a fork or potato masher. Whisk in beaten eggs, almond butter, and flax.
  2. Melt butter in a small, nonstick skillet over low heat. Pour in egg mixture. Cook on low until mostly set, about 5-7 minutes. Carefully flip and cook 2-3 minutes more.
  3. Serve warm with desired toppings. Enjoy!
