INGREDIENTS

  • 2 medium bananas, mashed
  • ½ cup Justin’s Peanut Butter
  • 2 eggs, lightly beaten
  • 2 tablespoons maple syrup
  • 2/3 cup milk of choice
  • 1 ½ teaspoons vanilla bean paste (or vanilla extract)
  • 2 cups old fashioned oats
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup dark chocolate chips

DIRECTIONS

  1. Preheat oven to 350 degrees F. Grease a standard muffin tin or line with paper muffin cups.
  2. In a large bowl, mix together the mashed banana, peanut butter, eggs, maple syrup, milk and vanilla until well combined. Add the oats, cinnamon, baking powder and salt. Stir well. Fold in chocolate chips.
  3. Divide batter evenly among 12 muffin cups and bake 20-24 minutes. Remove from oven and cool completely. Enjoy!
