INGREDIENTS

4 JUSTIN’S® Super Dark Chocolate Peanut Butter Cups, roughly chopped
¾ cup dark chocolate chips
1 (15-ounce) can full-fat coconut milk
1 cup pitted medjool dates
1 teaspoon vanilla extract
¼ cup JUSTIN’S® Peanut Butter
Coconut whipped cream (to garnish)
Chopped peanuts (to garnish)

DIRECTIONS

  1. In a medium, microwave-safe bowl, combine the peanut butter cups and chocolate chips. Microwave for about 90 seconds, or until melted, stirring every 30 seconds.
  2. In a high-speed blender, blend the coconut milk, dates, and vanilla until smooth.
  3. Add the melted chocolate and peanut butter, and blend until well combined.
  4. Pour mousse into 4-6 small glasses or jars and refrigerate, covered, overnight.
  5. When ready to serve, top with a dollop of coconut whipped cream and garnish with chopped peanuts.
