Chocolate-Dipped Crunchy Peanut Butter Banana Popsicles

INGREDIENTS

For the popsicles:

  • 2 ripe bananas
  • ¾ cup JUSTIN’S® Crunchy Peanut Butter
  • ½ cup Greek yogurt (or coconut yogurt for dairy-free)
  • ¼ cup milk of choice, or whipping cream for a richer flavor
  • 2 tbsp honey or maple syrup (optional, depending on banana sweetness)
  • 1 tsp vanilla extract
  • Pinch of salt

For the coating:

  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • ½ cup chopped roasted peanuts

DIRECTIONS

  1. Blend bananas, JUSTIN’S® Crunchy Peanut Butter, yogurt, milk, honey, vanilla, and salt until
    smooth.
  2. Pour into popsicle molds and insert sticks. Freeze for at least 4 hours, or until solid.
  3. Melt chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until
    smooth.
  4. Dip frozen popsicles into cooled melted chocolate, then immediately sprinkle or roll in chopped
    peanuts.
  5. Place on a parchment-lined tray and return to the freezer for 10 minutes to set. Enjoy!
