INGREDIENTS

For the peanut sauce:

  • ½ cup JUSTIN’S® Crunchy Classic Peanut Butter
  • ½ cup coconut milk (full fat)
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon yellow curry powder
  • 1 clove garlic, grated

For the pizza:

  • 1 premade pizza crust
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked grilled chicken, sliced
  • ¼ cup red onion, thinly sliced
  • ½ red bell pepper, thinly sliced

For topping:

  • ½ cup shredded carrots
  • ¼ cup fresh cilantro leaves
  • 2 tablespoons chopped peanuts

DIRECTIONS

  1. Make the peanut sauce: In a small saucepan over medium-low heat, combine peanut
    butter, coconut milk, brown sugar, soy sauce, curry powder, and grated garlic. Stir until
    smooth and slightly thickened, set aside.
  2. Assemble the pizza: Spread a generous layer of the peanut sauce over the premade
    crust. Top with mozzarella, red onion, red bell pepper and chicken Place the pizza
    directly on the grill grates. Close the lid and grill for 6–8 minutes, or until the cheese is
    melted and bubbly and the crust is crisp.
  3. Remove the pizza from the grill. Immediately top with shredded carrots, cilantro,
    chopped peanuts, and a drizzle of JUSTIN’S® Crunchy Classic Peanut Butter or
    additional peanut sauce.
